Simon’s journey to the kitchen was anything but conventional. Trained as an architect, he quickly realised that his true passion was food — experimenting with flavours and techniques at home long before stepping into a professional kitchen.
What began as a personal love of cooking became a bold career change, and today Simon is the creative force behind The Griffin’s award-winning kitchen. Known affectionately as the “Accidental Chef,” he combines a chef’s artistry with an architect’s eye for detail, crafting dishes that are as visually stunning as they are delicious. After 15 years at the helm, his love and passion for The Griffin remain as strong as ever, having grown it into a destination seafood pub celebrated across Pembrokeshire and beyond.
Simon is particularly renowned for his innovative sauces, designed to perfectly complement the pub’s fresh seafood dishes. Four years in the making, these sauces are now available to purchase at The Griffin, with plans to expand nationwide in the near future. His cooking philosophy blends tradition and innovation, always showcasing the best of local, seasonal ingredients, with provenance and sustainability at its heart.
Throughout his career, Simon has earned numerous accolades, cementing The Griffin as a must-visit culinary destination while maintaining the warmth and hospitality of a family-run pub
After 15 years at the helm of The Griffin, Siân Mathias remains very much at the heart of this much-loved, family-run pub. For many, she is the familiar, friendly face that makes every visit feel relaxed and welcoming — whether guests are stopping by for a quick drink or settling in for a special meal by the sea. Siân and her husband, Simon, have raised their family alongside the business, and now, with the children having flown the nest, an exciting new chapter is beginning.
Hospitality has faced unprecedented challenges in recent years, and like many in the industry, Siân has seen firsthand how much resilience, creativity, and care it takes to keep a business thriving. It was during this time that she felt inspired to return to her first passion — travel. Before taking on the pub, Siân spent over a decade in the travel industry, and now she is bringing that experience, organisation, and love of discovering the world into her new venture, Voyages by Siân.
While she continues to be part of The Griffin, which will always have her heart, Siân now applies the same attention to detail, warmth, and enthusiasm to creating bespoke, luxury, personal and unforgettable travel experiences for her clients
