Simon’s path to the professional kitchen wasn’t conventional. Originally trained and working as an architect, his true passion was always cooking, experimenting with flavours and techniques at home long before ever stepping into a commercial kitchen.
What began as a personal love for food eventually led to a bold career change, and today, Simon is the driving force behind The Griffin’s award-winning kitchen. As the ‘Accidental Chef’, he brings a unique perspective to the culinary world , blending creativity, structure, and a deep respect for local, seasonal ingredients. His leadership style champions both tradition and innovation, always with a focus on provenance and sustainability.

Sian is the welcoming face of The Griffin and the driving force behind its warm, professional front-of-house experience. With a natural talent for hospitality and an eye for detail, she ensures that every guest feels at home, whether they’re popping in for a pint or sitting down for a special seafood meal by the sea.
Working in partnership with her husband, Simon, Sian helps shape the unique atmosphere that makes The Griffin more than just a pub, it’s a place where locals and visitors return time and again for great service, great food, and genuine Pembrokeshire hospitality.
Owen – The Aussie Behind the Bar
Owen rocked up last season from Australia at the age of 19, started as our second barman, learned the ropes quicker than you can say “make mine a double,” and now somehow runs the whole bar. We’re not entirely sure how it happened either — but we’re very glad it did.
He’s got a dry sense of humour (you’ve been warned), but he’s a total hit with customers and locals alike — especially once the drinks start flowing. Cocktails, banter, remembering your usual after one visit?
He’s nailed it!
Owen’s here for the long haul — unless he’s off gallivanting the globe in our off-season, but don’t worry, he always comes back. You’ll find him behind the bar, probably pretending he’s not enjoying the attention…
Faye – Front of House Superstar
Faye swapped the stage lights for seaside sunsets when she moved to Dale in early 2025 to join her partner Jay (you’ll find him cooking up a storm in the kitchen). With a background in dance, performance, and working across international venues, she knows exactly how to keep things running smoothly — and look good doing it.
Now holding the reins as our Front of House Supervisor, Faye brings serious energy, warmth, and a knack for making everyone feel like a VIP. She’s the first friendly face you’ll see and probably the one who’ll remind you you’ve got spinach in your teeth — in the nicest way possible, of course.
Charming, efficient, and always two steps ahead, Faye’s already become an essential part of The Griffin crew — and we wouldn’t have it any other way.

The Roles
We are hiring for the following seasonal positions:
Be the face of The Griffin – welcoming guests, taking orders, and delivering great service with a smile (and a flair for reading the daily fish specials!).
Help prepare and serve our popular menu, especially our seafood dishes. This role could suit a trained chef, experienced cook, or kitchen assistant comfortable working in a fast-paced environment.

The Griffin is a long-established, family-run seaside pub and restaurant nestled on the stunning Pembrokeshire coast. We’re known for our fresh, locally sourced seafood and hearty home-cooked pub classics. From seafood platters by the sea to comforting traditional favourites, our guests visit us for a genuine taste of the coast.
As a seasonal business, our busiest months run through the summer into autumn — and we’re now looking for a reliable, hard-working Prep Cook / Kitchen Assistant to join our team until the end of the season (November 2025).

As a Prep Cook / Kitchen Assistant, you’ll be an integral part of our kitchen team, with a particular focus on preparing high-quality desserts and assisting with general kitchen duties. This is an ideal role for someone who thrives in a busy kitchen environment, values quality, and enjoys both savoury and sweet prep work.
Food Preparation
Prepare ingredients for a variety of dishes including starters, mains, sides, and desserts
Assist in dessert preparation and plating with attention to detail and consistency
Ensure all food is stored and handled in line with food safety standards
Maintain a clean, sanitised and well-organised kitchen workspace
Teamwork & Service Support
Work closely with the kitchen team to ensure smooth, efficient service during busy periods
Support timely and accurate food delivery to the front-of-house team
Collaborate to uphold high presentation and quality standards
Stock & Quality Control
Monitor stock levels for key ingredients, particularly for desserts
Notify the head chef of low stock and assist in restocking as needed
Ensure all dishes meet our presentation and taste standards before leaving the kitchen
Experience in a similar role (prep cook, pastry chef, dessert chef) preferred
Strong attention to detail and ability to follow recipes accurately
Comfortable working in a fast-paced kitchen during peak hours
Passion for quality ingredients and coastal cuisine
Reliable team player with good communication skills
Solid understanding of food hygiene and kitchen safety practices
