Position // Sous Chef Job Specification

The Griffin is a 17th century Award Winning Seaside pub/restaurant, located on the beautiful seafront in Dale, Pembrokeshire SA62 3RB. The Griffin specialises in seafood, which is enjoyed in a relaxed and informal atmosphere, seating around 70 covers. It has an outstanding reputation and is loved by locals, returning holiday makers and new customers.

We are looking to recruit a Sous Chef on a permanent or seasonal basis. The successful candidate will be able to create and prepare their own dishes, as well as producing our pub classics and our seafood signature dishes. It is important that you have previous experience and are comfortable working with fresh seasonal produce and where possible locally sourced, as we make everything in house using said ingredients. Our food, takes influence from all over the world and so are looking for someone who is creative, skillful and passionate about their work. We and our customers have exceptionally high standards on the food the kitchen sends out. As Sous Chef you will have the day to day responsibility for structuring and motivating the kitchen team and are after someone that values a happy working environment, alongside ensuring everything is done to the highest of standards. The role will be year round but with a big focus on ‘the season’, where we are at our busiest, with the autumnal and winter months being quieter and with reduced opening times.

Job Requirements & Responsibilities:

  • Energetic and ability to deal with extremely busy shifts during the season
  •  Having the ability to multitask and work efficiently under pressure.
  •  Great experience of having worked in incredibly busy kitchens
  • Full day to day Management of the kitchen
  •  Managing a full kitchen team – briefing, supervising and motivating team members (many who will be seasonal).
  • You must possess excellent attention to detail to ensure all food goes out tasting and look fantastic.
  • 5* hygiene levels, including Level 2 Food Hygiene Certificate (ideally already have but for the right candidate can offer training).
  • Great back-office knowledge when it comes to stock management, training and development, invoicing, health & safety, compliance and other management duties.
  •  Fun and friendly that can engage with a local community and team.
  •  Ability to work closely with the owners (Simon & Sian), who will still be very much part of the daily workings of the Griffin. Simon, has been Head Chef and you will be learning the role and what the Griffin is from him.
  • Willingness to relocate to rural West Wales

Position // Kitchen Assistant

Competitive Hourly Rate – Part-time or full-time positions available.

We are looking to recruit full-time (live-in option) or part-time Kitchen Assistants starting ASAP.

You would be an integral member of the kitchen team, helping the chefs to prepare all aspects of the food ready for service, as well as ensuring the kitchen is kept clean and tidy. Ensuring the food produced and presented to the customer is of the highest standard is of upmost importance and it all starts with the initial preparing of the food. Working with food means that the environment in which it is kept and prepared is of upmost importance. You must have great hygiene practices, in the preparation of the food but also the area in which you work. You may at times be asked to run food, taking food from the kitchen out to our customers. So a friendly, positive and professional attitude is essential. We are looking for someone that is reliable, trustworthy, thrives in a busy environment and has great attention to detail. 

The role for the right candidate can be flexible in terms of hours and days (full or part-time); the role might suit someone that is looking for work around school drop off and collection times.

Position // Bar Tender

Competitive Hourly Rate – Part-time or full-time positions available (ideal fro University Students wanting to work in the summer holiday)

We are looking to recruit full-time (live-in option) or part-time Bar Tenders ASAP.

The Griffin is a 17th century Award Winning Seaside pub/restaurant, located on the beautiful seafront in Dale, Pembrokeshire SA62 3RB. The Griffin specialises in seafood, which is enjoyed in a relaxed and informal atmosphere.  We also are incredibly popular with drinkers, who come to enjoy ‘The Wall’, it is the sea wall and therefore has the most incredible location and views, being right by the sea. It has an outstanding reputation and is loved by locals, returning holiday makers and new customers alike.

Previous experience of working in a bar is desirable but not essential, we are happy to train people. We are looking for staff that are reliable, friendly, polished, professional, trustworthy, thrive in an incredibly busy and high pressured environment, have great attention to detail and being able to be one step ahead of customers’ needs. You must have a willingness to learn and take advice and knowledge from those that offer it to you. This may suit, a school leaver (18 years old plus) or a student on holiday from studies etc.

As a member of the Bar/Front of House team you will be meeting and greeting our customers and you’ll set the scene for what they can experience whilst they dine or drink with us. You will prepare drink orders for those that dine with us, whilst also managing the demand from those just drinking with us (when the weather gods are looking at us favourably, ‘The Wall’ can be heaving and is loved by many thirsty customers!). At busy times, especially during the peak Summer months, this can be incredibly hectic and intense. You need to be able to multi-task, be adept at dealing with pressure and be able to keep control. You must at all times show a friendly and amenable manner, customer service is key. Those behind the bar will often be the first encounter, for many, with the Griffin and what we are and what we stand for, so how you conduct yourself is paramount. You are the window into what we can offer and deliver to our customers and are always on show to our customers. You may be required to complete stock checks and restocking, barrel changes etc, depending on experience. As the bar is customer facing, you also must ensure that the bar area is kept in a hygienic, clean and tidy at all times and that at the end of shifts it is cleaned down. You will need 5* hygiene skills for this role, to make sure that not only is the area clean but how drinks are prepared etc are done so in a hygiene manner. At certain times you may also be required to assist the Front of House team with preparing for service and looking after customers at tables – taking orders and looking after them whilst they dine with us. 

We welcome new customers frequently and want them to leave with a sense of belonging and desire to come back. So many of our customers have returned for many a year, many have been coming on holiday here for generations and the Griffin is a huge part of this, as it is for locals. As a bar tender, you will have some of the greatest interaction with our customers and it is paramount that you can build a report with them, so that they feel valued and looked after, as they always have done. The Griffin is known and prides itself on its friendly, informal but professional manner.

Duties & Requirements 

  • Meeting & Greeting guests 
  • Preparing and pouring drinks  
  • Providing customers’ with the true Griffin experience – ensuring that the customer feels they have been welcomed and looked after throughout their time with us
  • Looking after the bar and cellar 
  • Barrel changes and looking after the pumps (we can offer barrel changing training for the right candidate)
  • Previous bar/hospitality experience preferable but not essential 
  • As and when required helping the Front of House team prepare for service and at times look after customers at tables taking orders etc.
  • Clearing, cleaning and wiping tables and the bar etc
  • Ensuring all equipment is clean and put away correctly
  • At end of service/shift making sure your area is clean and tidy and relaying tables for next service/shift as required 
  • 5* hygiene levels across all areas, including drinks preparation
  • Polite, friendly and professional 
  • A can-do attitude, no job or request is too big or small
  • Taking orders and taking payment 
  • Liaising with kitchen and other teams

A kitchen porter is the backbone of the back of house operation, providing crucial support to the wider team. We are looking for someone that is reliable, trustworthy, thrives in a busy and high pressured environment, has great attention to detail (to ensure that even the chefs are left sparkling!) and enthusiastic about developing their skills. We are committed to people development at all stages and the long service of our key members of staff are testament to that. Kitchen porters often have the opportunity to progress to a kitchen assistant with further promotions possible –a willingness to learn and to make sure every task is completed to the highest standard are the quickest ways to progress through the kitchen ranks!

Duties & Requirements 

  • Washing up, cleaning and clearing all kitchen areas
  • Unloading and putting away deliveries
